Ghee or Oil for Tadka? What Actually Changes in the Pan

Use ghee when the fat is meant to be tasted, and oil when it is only meant to carry heat. Ghee smokes at around 250°C — higher than most cooking oils — and it brings its own aroma to whatever is tempered in it. Oil is neutral and cheaper, and for a dish where the fat should disappear that is exactly what you want.

Why does ghee take heat so well?

Because the things that burn have already been taken out of it. Making ghee cooks off the water and strains out the milk solids, leaving almost pure fat. Butter, which still contains both, browns and then burns at a far lower temperature. That is the whole reason ghee exists as a separate ingredient: it is butter made heat-stable.

A domestic tadka rarely approaches 250°C, so in practice ghee is nowhere near its limit when you drop cumin into it.

What does ghee do to a tadka that oil does not?

Two things.

  1. It carries aroma of its own. Whole spices bloomed in ghee taste of both the spice and the ghee. In neutral oil they taste of the spice alone.
  2. It holds fat-soluble flavour well. Tempering works because the compounds in spices dissolve into hot fat and then spread through the dish. Ghee is an unusually good solvent for that, which is why a spoonful over dal reads as more than a spoonful.

When is oil the better choice?

A practical way to use both

Cook in oil, finish in ghee. The bulk fat does the heat work at the cost you want, and a spoonful of ghee stirred through at the end — or poured over as tadka — does the aroma work where you will actually notice it. This is also the frugal answer: it puts a costly ingredient exactly where it earns its price.

Whether that spoonful is worth what it costs comes down to how the ghee itself was made. Hand-churned bilona ghee is a different process from cream-separated ghee, and the aroma is the part where the difference shows up in the pan.
