A2 Gir cow ghee, hand-churned the bilona way

Bilona ghee is made by culturing whole milk into curd overnight, hand-churning that curd into butter, and simmering the butter slowly into ghee. It takes 25 to 30 litres of milk to make one litre. We believe in transparency: every jar of Organic Farmz ghee is made fresh, in small batches, from the milk of our own A2 Gir cows — cultured overnight into curd, hand-churned into makkhan, and simmered slowly over a gentle flame. Nothing is stored for months. Nothing is hidden. We make it only after you order it, and we send you the proof.

01 / Our Method

Made the way nature intended.

The Bilona method is slow on purpose. Instead of spinning cream out of raw milk in a machine, we set the whole milk into curd overnight, hand-churn that curd until the butter separates on its own, and then simmer the butter down until it turns clear, golden and fragrant. It takes far longer and yields far less — roughly 25 to 30 litres of milk for a single litre of ghee — but it is the only way to get that grainy texture and deep nutty aroma our grandmothers would recognise.

Bilona Method

Fresh milk is cultured overnight into curd, hand-churned into makkhan (white butter), and then slowly simmered until pure ghee rises clear and golden. No cream separators, no shortcuts, no blending of old batches.

A2 Gir Cow Milk

Our herd is desi Gir — indigenous cattle that give naturally A2 beta-casein milk. Milk is collected only after the calves have fed first, every single morning. They graze open pasture, and they are never given hormones to push yield.

02 / The Procedure

Eight gentle steps. One exceptional jar.

One batch, one family. A batch is never split across strangers — your jar is filled from ghee made for your order, and the jar code on the lid tells you exactly which morning's milk it came from.

Radical transparency

Every jar has a story. You get to see it.

Most brands ask you to trust a label. We would rather just show you. From the morning your milk is collected to the moment your parcel is handed to the courier, you receive real photos and short videos of your order being made — not stock footage, not a generic gallery. Your name, your batch, your jar.

We stay small on purpose. Around 100 Gir cows, 400–500 litres a month — we would rather run out than dilute what we make.
