About Organic Farmz
Organic Farmz makes one thing: A2 Gir cow ghee, by the traditional bilona method, in small batches. We are based in Delhi and deliver across India. Every jar is made after the order is placed, not taken from stock.
Our herd
We work with around 100 desi Gir cows, an indigenous Indian breed whose milk naturally carries the A2 beta-casein protein. The calves drink first, every morning, before any milk is collected. The cows graze open pasture and are never given hormones to push yield.
That keeps us small: about 400 to 500 litres of ghee a month. We would rather run out than dilute what we make.
How the ghee is made
Bilona is the slow way. Instead of spinning cream out of milk in a machine, we:
- Collect fresh Gir cow milk, hand-milked each morning after the calves have fed.
- Bring it gently to a boil in a heavy vessel, then cool it.
- Culture it with our own starter and leave it to set into curd overnight.
- Hand-churn the curd at dawn until the makkhan (white butter) gathers.
- Simmer the butter low for hours until the milk solids toast and settle.
- Strain off the clear, golden ghee and rest it until it turns grainy.
- Pour it into glass, seal it, code-stamp it and pack it by hand.
It takes roughly 25 to 30 litres of milk to make a single litre of ghee this way. That ratio, and the hand work, are why bilona ghee costs more than factory ghee made from separated cream.
You see your own batch
A batch is never split across strangers. From the morning your milk is collected to the moment your parcel reaches the courier, we send real photos and short videos of your order on WhatsApp. The code on your jar tells you which morning’s milk it came from.
