Govardhan Puja Annakut Food: Cooking with Ghee

Annakut food cooked on Govardhan Puja traditionally features a large variety of seasonal autumn vegetables, grains, and sweets prepared in pure A2 Gir cow ghee so the dishes retain their flavor and texture throughout a day of large gatherings. Preparing dozens of items—ranging from mixed vegetable curries to slow-cooked grain halwas—requires cooking fats that handle sustained heat without breaking down or turning bitter.

What vegetables and grains are best suited for Annakut cooking?

Annakut recipes traditionally incorporate fresh early-winter produce such as cauliflower, radish, eggplant, pumpkin, raw banana, peas, and root vegetables cooked together in a single large pot. Coarse grains like whole wheat flour, semolina (sooji), bajra (pearl millet), and rice form the structural base for accompanying puris, khichdi, and sweet halwas. Because autumn vegetables carry high moisture content, roasting them lightly in ghee before simmering prevents them from becoming soggy and helps hold their shape when cooked in large volumes.

Why is traditional bilona ghee preferred for large-batch Annakut recipes?

Traditional A2 Gir cow ghee made by the bilona method has a high smoke point of roughly 250°C (482°F), making it ideal for the deep frying and heavy sautéing required when preparing multiple dishes simultaneously. Unlike refined oils that can break down into greasy films over long cooking sessions, bilona ghee coats spices and vegetables evenly. The natural curd-churned aroma enhances spices like cumin, ginger, coarse coriander, and asafoetida without overpowering the subtle natural flavors of seasonal vegetables.

How does ghee help preserve Annakut dishes made a day in advance?

Ghee acts as a natural protective barrier against moisture loss, keeping cooked vegetables and fried bread tender when prepared ahead of time for day-long dining. When frying puris or roasting flour for sweet dishes, using ghee for sautéing and frying locks in internal moisture while sealing the exterior. Dishes prepared in pure cow ghee resist oxidation better than those cooked in seed oils, ensuring that leftovers remain fresh-tasting when reheated gently the next day.

Our cows are not use and throw

green fodder and a clay water bowl set out in front of her

A cow that stops giving milk is still our cow. She stays on the farm, with the same feed, the same shed and the same medical care she had when she was milking. We do not sell her on and we do not let her go. That is the whole basis of the ghee we make — you cannot ask an animal for her milk and then abandon her for it.

Our mission goes further than our own herd. There are cows on the street who are injured every day, who eat plastic, who cry through the night with nobody coming. We want to take them in. The plan is a chain of Organic Farmz gaushalas in several places, so that help is not one shed in one city but something a hurt animal can actually reach.

This takes more than we can carry alone — land, fodder, vets, hands. Come and join our initiative. Anything you give goes to feed, treat and shelter these cows.

How does bilona ghee compare to refined oil in Annakut preparations?

Choosing the right fat impacts texture, shelf stability, and aroma across large meal preparations. Here is how A2 bilona ghee compares to standard refined oil during Annakut cooking:

Cooking AttributeA2 Bilona Gir Cow GheeRefined Vegetable Oil
Heat ToleranceHigh smoke point (~250°C); stays stable during long deep-frying batches.Variable smoke point; degrades and smokes after repeated frying cycles.
Texture & Moisture RetentionSeals moisture in vegetables and puris without rendering them greasy.Tends to leave a greasy coating on cooling; foods can absorb excess oil.
Aroma & Spice BindingCarries whole spices deep into root vegetables with a rich, nutty fragrance.Neutral or chemical aroma; fat separates easily from heavy spiced gravies.
Holding TimePreserves cooked food texture across extended room-temperature serving hours.Cooling oil can turn foods heavy or soggy as dishes sit out.

What is the best way to handle ghee when frying puris in bulk?

When deep-frying large batches of puris for Annakut, maintain a steady medium-high flame so the ghee remains hot enough to puff the dough instantly without scorching. Skim off any stray bits of flour or dough between batches using a fine wire skimmer to prevent charred particles from dulling the ghee's golden color or introducing burnt notes to subsequent batches. If you need to top up the frying vessel mid-way through cooking, add fresh room-temperature ghee around the rim of the pan so it warms gradually into the hot fat without dropping the overall frying temperature sharply.

How should leftover Annakut dishes be stored and reheated?

Store leftover Annakut sabzis, khichdi, and sweets in clean glass or stainless steel containers fitted with airtight lids after they cool completely to room temperature. Keep the containers in the refrigerator if holding them beyond the day of cooking. To reheat, warm vegetable preparations in a heavy-bottomed pan over low heat with a small spoonful of fresh A2 ghee and a splash of water to restore moisture, rather than microwaving on high power which can separate the cooking fats.
