Why Is A2 Gir Cow Ghee So Expensive? A Cost Breakdown

The single biggest reason is the ratio: one litre of bilona ghee takes 25 to 30 litres of whole milk. Before anyone is paid for their time, before packaging, before delivery, a jar already carries the cost of that much milk. Everything else is a rounding error next to it.

That is not a markup. It is arithmetic, and it is the same arithmetic for anyone making ghee this way.

Where does the money actually go?

Three things, in descending order of weight.

1. The milk

Twenty-five to thirty litres per litre of ghee. Cream separation — the industrial route — pulls far more fat out of the same milk, faster, because it skips the curd stage entirely and takes the cream directly. Less milk per litre of ghee means a lower cost per jar. It is the honest advantage of the machine, and it is most of the price gap.

2. The labour and the waiting

Setting curd takes a night. Churning takes a person. Simmering takes a low flame and someone watching it. A centrifuge takes none of those and does not stop. Hand work does not get cheaper with volume the way machine work does.

3. Making to order rather than to stock

Ghee made after an order is placed is made in small batches. Ghee made to fill shelves is made in large ones. Small batches cost more per litre, and they are the reason a jar arrives having been made recently rather than having sat in a warehouse.

Is it worth it?
