Who Should Not Buy Bilona Ghee: Three Main Reasons

Who should avoid purchasing bilona ghee for their kitchen?

You should not buy bilona ghee if you prioritize a neutral cooking flavor, require a low-cost fat for high-volume deep frying, or find the distinct, fermented aroma of traditional cultured butter unappealing. While A2 Gir cow ghee made by the bilona method is a staple in many Indian households, it is an artisanal product that does not suit every culinary need or every grocery budget. It is a premium food item crafted through a labor-intensive process, and for certain kitchen tasks, simpler or more cost-effective fats may be more appropriate.

Does the cost of bilona ghee fit your monthly budget?

Bilona ghee is significantly more expensive than commercial, cream-based ghee because of the sheer volume of milk required and the manual labor involved. To produce just one liter of authentic A2 Gir cow ghee, we typically need about 25 to 30 liters of A2 milk. This milk is boiled, turned into curd, and then churned by hand or a slow-moving motor to separate the butter. If you are looking for a basic fat to use in large quantities for everyday frying where the nuances of the fat are lost, the price point of bilona ghee might not make sense for your household. It is often better viewed as a finishing oil or a supplement rather than a bulk frying medium.

Do you prefer cooking fats with a neutral aroma?

If you enjoy the taste of refined vegetable oils because they do not interfere with the flavor of your ingredients, bilona ghee may not be for you. Because bilona ghee starts with curd (dahi) rather than raw cream, it possesses a deep, nutty, and slightly tangy aroma that is characteristic of traditional Indian cooking. In dishes like delicate Western pastries or certain subtle stir-frys, this strong profile can be overwhelming. If your palate is accustomed to the milder, more buttery scent of factory-produced ghee, the robust character of a jar from Organic Farmz might be a surprise you aren't ready for.

Are you planning to deep-fry in large quantities?

While ghee has a high smoke point and is excellent for heat stability, using bilona ghee for deep-frying liters of snacks is rarely economical. For a large batch of festive pakoras or vadas, most households find it more practical to use a high-quality cold-pressed oil. Bilona ghee is best reserved for drizzling over hot dal, spreading on fresh phulkas, or whisking into a bowl of khichdi. Using it in a deep-fryer where the oil is often discarded after a few uses can be a waste of a handcrafted product that took days to prepare.

Our cows are not use and throw

green fodder and a clay water bowl set out in front of her

A cow that stops giving milk is still our cow. She stays on the farm, with the same feed, the same shed and the same medical care she had when she was milking. We do not sell her on and we do not let her go. That is the whole basis of the ghee we make — you cannot ask an animal for her milk and then abandon her for it.

Our mission goes further than our own herd. There are cows on the street who are injured every day, who eat plastic, who cry through the night with nobody coming. We want to take them in. The plan is a chain of Organic Farmz gaushalas in several places, so that help is not one shed in one city but something a hurt animal can actually reach.

This takes more than we can carry alone — land, fodder, vets, hands. Come and join our initiative. Anything you give goes to feed, treat and shelter these cows.

How does bilona ghee compare to commercial ghee?

To help you decide if this product is right for your pantry, consider the following differences between the traditional bilona method and the modern cream-separator method used by most large brands.

Feature Bilona Ghee (A2 Gir Cow) Commercial Cream Ghee
Base Material Whole milk curd (Dahi) Raw milk cream (Malai)
Fat Content Cultured, fermented fats Directly rendered milk fat
Aroma Rich, nutty, and traditional Mild, sweet, or oily
Price Point Premium (Higher production cost) Economical (Mass produced)

Are you looking for a medical cure or a miracle supplement?

If you are buying bilona ghee with the expectation that it will cure a specific disease or act as a medicine, we advise against the purchase. Bilona ghee is a whole food, a traditional fat used in Ayurveda for its grounding properties and its ability to balance Agni (digestive fire). However, it is not a pharmaceutical product. While it is a wholesome addition to a balanced diet, it should never be treated as a replacement for medical advice or treatment. It is a kitchen staple meant for nourishment and flavor, not a clinical solution.

Is the texture of artisanal ghee right for your preferences?

Bilona ghee is known for being 'danedaar' or grainy. This texture occurs naturally as the ghee cools at room temperature, but it can vary significantly depending on the season and the specific batch of milk. If you prefer a perfectly smooth, uniform, and wax-like consistency that never changes throughout the year, you might find the natural variations of bilona ghee frustrating. At Organic Farmz, we do not use stabilizers to keep the texture consistent; we allow the weather and the cow's seasonal diet to dictate the final feel of the ghee.

Do you have the time to store and use it properly?

Bilona ghee is a shelf-stable product, but it requires a bit more care than a highly processed oil. It should always be handled with a clean, dry spoon to prevent moisture from entering the jar, which can lead to spoilage. If your kitchen habits involve reaching into jars with wet fingers or used cutlery, you might find that an artisanal, preservative-free ghee does not last as long as you expect. For those who want a 'set it and forget it' fat that can withstand any environment without care, industrial oils might be a more convenient choice.
