Your First Jar of A2 Ghee: What to Expect When You Open It
What does your first jar of A2 ghee smell like when you open the lid?
When you first unscrew the lid of a jar of traditional A2 Gir cow ghee made by the bilona method, the aroma is warm, nutty, and mildly sweet rather than sharply buttery. Unlike commercial tinned fats that carry a neutral or slightly oily scent, authentic artisanal ghee retains the gentle fragrance of cultured whole milk churned into curd, simmered slowly over a wood or gas fire. The scent fills the kitchen softly without overpowering your senses, reminding many home cooks of the ghee their grandmothers used to make in open brass vessels during festive seasons.
Why does the colour of A2 ghee look different across the year?
The colour inside your glass jar will not always be a uniform, bright yellow; it naturally shifts from a pale cream to a deeper golden hue depending on the season. Gir cows grazing outdoors on green pastures in the monsoon or winter consume fresh grasses and seasonal fodder that naturally influence the carotene content in their milk. Because small-batch producers do not use artificial food colourings or bleaching agents to standardize every batch, your jar will reflect the natural variations of what the cows ate during the specific month they were milked.
Our cows are not use and throw
A cow that stops giving milk is still our cow. She stays on the farm, with the same feed, the same shed and the same medical care she had when she was milking. We do not sell her on and we do not let her go. That is the whole basis of the ghee we make — you cannot ask an animal for her milk and then abandon her for it.
Our mission goes further than our own herd. There are cows on the street who are injured every day, who eat plastic, who cry through the night with nobody coming. We want to take them in. The plan is a chain of Organic Farmz gaushalas in several places, so that help is not one shed in one city but something a hurt animal can actually reach.
This takes more than we can carry alone — land, fodder, vets, hands. Come and join our initiative. Anything you give goes to feed, treat and shelter these cows.

What are the tiny grains or texture layers inside the jar?
Real bilona ghee is often characterised by a fine, granular texture known traditionally as danedaar, where small suspended fat crystals form naturally during the slow cooling process. When you push a clean dry spoon into the jar, you will notice it is neither rock-hard nor watery, but rather has a semi-solid, rich consistency that melts smoothly at room temperature. These natural grains are a sign of proper simmering time and traditional curd-churning techniques, separating artisanal batches from ultra-filtered, industrially centrifuged fats.
How does traditional A2 ghee behave when you heat it in a pan?
As you drop a spoonful of this ghee into a hot iron skillet or heavy kadhai, it melts instantly into a clear amber liquid with a gentle, steady sizzle rather than popping violently or creating excessive foam. The high smoke point allows you to temper spices, roast rava, or fry whole wheat rotis without the fat burning or turning acrid. Once heated, it leaves a clean mouthfeel on the palate, coating your everyday dal and rice without feeling heavy or coating your throat with a greasy film.
How does traditional ghee taste compared to regular supermarket brands?
Your first taste will reveal a clean, rounded flavour profile with a warm, lingering aftertaste that feels nourishing rather than heavy. Commercial vegetable oil blends and standard dairy fats often taste flat or purely salty-sweet, whereas A2 Gir cow ghee carries a distinct depth that comes from traditional curd-culturing before churning. It blends harmoniously into warm morning milk, enhances the subtle spices of an everyday sabzi, and brings out the earthy notes of hand-milled wheat rotis without tasting artificial or heavily processed.
